Local Cheeses by Labros Marakis

A highlight of the dining experience is the selection of locally crafted cheeses by the owner’s brother, a renowned fourth-generation cheesemaker in the highlands of Naxos.

He milks his goats and sheep in the traditional way, producing cheeses from the milk of free-range animals that graze among the island’s aromatic herbs. Crafted using techniques passed down through generations, his cheeses capture the distinctive character of the Naxian highlands, offering a true taste of the island in every bite.

His cheeses can also be found at his shop in Chalkio village, just 3.5 km from ELaiolithos, where visitors can experience more of the island’s traditional cheese-making heritage.
